  2. Use 1.5 cup pasta (any type of pasta can be used)
  3. Use 1.5 cup chopped vegetables of own choice (I used carrot, broccoli, onion & peas. Peas aren't needed to be chopped)
  4. You need 2 cups spinach
  5. Take 1/2 tbsp chopped garlic
  6. You need 2 tbsp garlic butter
  7. You need 1/2 tsp vegetable oil
  8. Prepare 2.5 tbsp flour
  9. Use 2 cups milk
  10. Use 2 cubes processed cheese
  11. Prepare 2.5 tsp black pepper powder
  12. Provide 2 tsp dried oregano
  13. Prepare as per taste salt
  14. You need 1/2 tsp sugar
  15. You need some fresh springs of coriander leaves for garnishing (optional)

  17. Provide 2 cups small boneless chicken cubes
  18. You need 1/2 tbsp ginger paste

Instructions to make Spinach Pasta with Baked Chicken Nuggets:
  1. Heat a good amount of water with good amount of salt & vegetable oil in a heavy bottomed pan until the pasta is al dente.
  2. Then drain the water & rinse the pasta with cold water. Keep it aside
  3. For making nuggets take the chicken pieces into a large bowl and add the ginger paste, garlic paste, piri piri spice powder, black pepper powder, salt & oil into it
  4. Mix everything very well & let the chicken be marinated for 10 minutes
  5. In the mean time preheat the microwave in convection mode at 200°C for 10 minutes
  6. Now let's move on to the preparation of pasta. Put the spinach in boiling water just for few seconds & then drain the water from the spinach and make a paste out of it. Spinach paste should be very smooth. Keep it aside
  7. Again move on to the nuggets now. Mix the flour and cornflour into a large plate & add some salt into the mixture
  8. Break the eggs into a bowl & mix a very little amount of salt into it
  9. Spread the breadcrumbs into a large plate
  10. Now take one chicken piece at a time, dredge it into the flour mixture, then dip into the egg & finally coat it with breadcrumbs
  11. Repeat the same for all the chicken pieces
  12. For pan searing the chicken pieces heat the butter and oil into a pan & add the chicken pieces into it
  13. Saute them for 4-5 minutes until they are light golden brown
  14. Now arrange the chicken pieces onto a baking tray
  15. Put the tray into the preheated microwave & bake the chicken in convection mode at 180°C for 18 minutes
  16. Remove the tray once in between & brush each of the chicken pieces with oil
  17. While chicken is cooking let's move on to the pasta now. For that boil the broccoli & peas in hot water for a couple of minutes and then drain the water. Then rinse the broccoli and peas with cold water
  18. Heat the butter and oil into a pan & add the chopped garlic into it
  19. Saute for few seconds & then add all the vegetables
  20. Saute for few minutes & then add the spinach paste
  21. Cook until the mixture in the pan becomes little dry
  22. Now sprinkle the flour & cook for about 1.5 minutes on medium flame
  23. Now increase the flame & add the milk
  24. Stir vigorously to prevent any lump formation as soon the mixture starts to thicken add the salt, sugar & black pepper powder
  25. Mix well & now grate the cheese cubes into the pan
  26. Mix everything well and now add the pasta
  27. Mix the pasta very gently with all the other ingredients into the pan
  28. Lastly mix the oregano & turn off the flame
  29. In the mean chicken should be thoroughly baked & ready to be served with the pasta
  30. For serving the pasta take few serving bowls and divide the pasta in equal amount in each bowl
  31. Put few chicken nuggets on top of the pasta in each bowl & finally garnish it with a fresh spring of coriander leaves

Once pasta is al dente, drain water. Cook the penne following pack instructions. Drain and toss with the remaining oil. Tip the pasta into a medium sized ovenproof dish. Stir in the chicken and pour over the sauce.
