- Season meat w paprika, s&p, lemon zest.
- Put potatoes on to boil
- Fry onion w garlic til soft. Add mushrooms and butter, sauté until golden. Remove from pan.
- Steam greens
- Fry beef for two mins til brown but still pink inside, turning. Stir mushroom /onion mix back in, add brandy and reduce for 1 minute. Remove from heat and stir in cream and coriander.
To make this easier, place the steak flat in the freezer for half an hour to an hour, until firmed but not frozen through. After slicing allow the meat to return to room temperature before cooking. Stroganoff sauce is a sour cream gravy made with beef broth that's thickened with flour. It's flavoured with mustard and has mushrooms in it.
